CLASSIFICATION: dry white wine made from grapes suitable for the production of Gavi D.O.C.G.
GRAPE VARIETIES: 100% Cortese.
AREA OF PRODUCTION: hills of Gavi.
WINE-MAKING TECHNIQUE: in white, cold, partly macerated on the skins; left in contact with yeasts, indigenous, of first fermentation (“sur lie”) until bottling. Bottled natural clear, to decant, without filtration.
RECOMMENDED PERIOD OF CONSUMPTION: without problems: excellent in the first few years, retains its characteristics excellently over time.
TASTING TEMPERATURE: not less than 12 °C.
To better appreciate the peculiarities of this wine, it is advisable to open the bottle some time in advance before tasting; a brief aeration will allow the wine to fully express all its complexity of aromas and flavors. Finally, it is advisable to use wide goblets.
COLOR: pale straw yellow, with delicate greenish highlights. Natural clarity by static decantation – unfiltered.
BOUQUET: intense, long, continuous, persistent, a warm and persuasive sensation in a soft and elegant complex.
TASTE: very typical, slight mineral hints fading into flint; walnut and toasted almond in the finish.
GASTRONOMIC ACCOMPANYMENTS: excellent throughout the meal, for after dinner and as a “meditation” wine. It is exalted in pairing with savory cheeses and meat pâtés.
