Sequoia, the new Fiano reserve produced by the Fonzone Caccese family in the heart of Irpinia, introduces itself to wine lovers. “A project born in 2019 and that has found its square with the 2020 vintage”-silvia Campagnuolo Fonzone stressed while presenting the reserve in Rome. Sequoia comes from the family vineyards located in Parolise, one of the most vocated areas of the area. The ripening of the grapes is completed in November with a late harvest, when the bunches are picked to make microvinifications. In the cellar, four masses are created that face different macerations: the first three in stainless steel, the last in wood. Subsequently, the four masses are assembled in tanks – again in steel – where they complete a 6-month aging on the lees. Aging continues in bottle for an additional four to five months. Sequoia has a color with deep green highlights. The nose has a refined bouquet: notes of jasmine, unroasted hazelnut, peeled almond, tangerine peel, and a sweet note reminiscent of vanilla along with hints of tropical fruit. Sequoia is a wine with a well-structured body and a great savoriness that makes it vertical. Fresh apple notes are evident in the aftertaste and citrus notes in the finish. It pairs well with fish dishes, crudités, shellfish, seafood, as well as medium-aged cheeses.
