CLASSIFICATION: Protected Designation of Origin sparkling wine, Brut.
AREA OF PRODUCTION: Area between the towns of Conegliano and Valdobbiadene.
GROWTH SYSTEM: Simple and double inverted espalier with 2500 vines per hectare.
PRODUCTION PER HECTARE: Maximum 135 quintals of grapes.
HARVEST PERIOD: Second decade of September.
VINIFICATION: The whole grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after an initial racking, is placed in temperature-controlled tanks where it remains until it is used to make the sparkling wine.
PAIRING: It is an excellent aperitif. It can accompany tasty appetizers and pairs well throughout a meal especially with fish dishes.
